1 lb (450g) boneless, skinless chicken thighs

2 tablespoons cornstarch

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon garlic powder

1/4 teaspoon cayenne pepper (optional, for heat)

1/4 cup vegetable oil, for frying

1 cup cooked jasmine rice

1 cup broccoli florets

1/2 cup shredded carrots

1 avocado, sliced

1/4 cup green onions, sliced

1/4 cup chopped cilantro (optional)

Bang Bang Sauce:

1/4 cup mayonnaise

2 tablespoons sweet chili sauce

1 tablespoon sriracha (adjust to taste)

1 teaspoon rice vinegar

1 teaspoon sesame oil

Prepare the Chicken: In a bowl, mix the cornstarch, salt, black pepper, garlic powder, and cayenne pepper. Toss the chicken thighs in this mixture until evenly coated.

    Cook the Chicken: Heat the vegetable oil in a large skillet over medium-high heat. Add the coated chicken thighs and cook for about 5-7 minutes on each side, or until they are golden brown and cooked through. Remove the chicken from the pan and let it rest for a few minutes before slicing it into bite-sized pieces.

      Steam the Vegetables: Meanwhile, steam the broccoli florets until tender, about 3-4 minutes. You can also blanch them in boiling water if preferred.

        Make the Bang Bang Sauce: In a small bowl, combine the mayonnaise, sweet chili sauce, sriracha, rice vinegar, and sesame oil. Whisk until smooth and set aside.
