For the Chicken:

1 lb boneless, skinless chicken breasts, cut into bite-sized pieces

1 cup buttermilk

1 cup all-purpose flour

1 tsp garlic powder

1 tsp onion powder

1 tsp paprika

Salt and pepper to taste

1/2 cup vegetable oil (for frying)

For the Bang Bang Sauce:

1/2 cup mayonnaise

1/4 cup sweet chili sauce

2 tbsp sriracha (adjust for spice level)

1 tbsp lime juice

For the Bowl:

2 cups cooked jasmine rice or quinoa

1 cup cucumber, diced

1 cup shredded carrots

1 cup red cabbage, thinly sliced

1 avocado, sliced

Green onions, sliced (for garnish)

Sesame seeds (for garnish)

Instructions
 

Marinate the Chicken: In a medium bowl, soak the chicken pieces in buttermilk for at least 30 minutes, or up to 4 hours in the refrigerator. This tenderizes the chicken.

    Prepare the Flour Mixture: In a shallow dish, combine the flour, garlic powder, onion powder, paprika, salt, and pepper. Mix well.

      Dredge the Chicken: Remove the chicken from the buttermilk, allowing excess to drip off, then dredge each piece in the flour mixture, coating well. Shake off the excess flour.

        Fry the Chicken: In a large skillet or frying pan, heat the vegetable oil over medium-high heat. Once hot, carefully add the chicken pieces in batches to avoid overcrowding. Fry until golden brown and cooked through (about 4-5 minutes per side). Remove and place on a paper towel to drain excess oil.

          Make the Bang Bang Sauce: In a small bowl, combine mayonnaise, sweet chili sauce, sriracha, and lime juice. Mix until smooth and well combined.

            Assemble the Bowls: Divide the cooked rice or quinoa among serving bowls. Top with the fried chicken, diced cucumber, shredded carrots, red cabbage, and avocado slices.
