This dish has evolved over the years, with various interpretations found in different regions, particularly in Chinese and Thai cooking.

Bang Bang Chicken Bowl

Ingredients
  

1 lb (450g) boneless, skinless chicken thighs

1 cup cornstarch

2 eggs, beaten

1 cup panko breadcrumbs

Salt and pepper, to taste

1 cup cooked jasmine rice

1 cup broccoli florets

1 small red bell pepper, diced

1/4 cup green onions, sliced

1/4 cup cilantro, chopped

1/2 cup Bang Bang sauce (see below for homemade sauce)

For Bang Bang Sauce:

1/2 cup mayonnaise

1/4 cup sweet chili sauce

1 tablespoon sriracha (adjust to taste)

1 teaspoon lime juice

1 clove garlic, minced

Instructions
 

Prepare the Bang Bang Sauce: In a bowl, whisk together mayonnaise, sweet chili sauce, sriracha, lime juice, and minced garlic until well combined. Adjust spiciness according to your taste and set aside.

    Prepare the Chicken: Cut the chicken thighs into bite-sized pieces. Season with salt and pepper.

      Bread the Chicken: Set up a breading station with three bowls: one with cornstarch, one with beaten eggs, and one with panko breadcrumbs. Dredge each chicken piece in cornstarch, dip in egg, and then coat with panko breadcrumbs.

        Cook the Chicken: Heat vegetable oil in a large skillet over medium heat. Once hot, add the breaded chicken in batches, cooking until golden brown and cooked through, about 6-8 minutes per side. Remove and drain on paper towels.

          Blanch the Broccoli: In a separate pot, bring water to a boil and blanch the broccoli florets for about 2 minutes, then immediately transfer them to an ice bath to stop cooking.

            Assemble the Bowls: In each serving bowl, place a generous scoop of jasmine rice. Top with the crispy Bang Bang chicken, blanched broccoli, and diced red bell pepper. Drizzle a hearty spoonful of Bang Bang sauce over the top.

              Garnish: Sprinkle sliced green onions and chopped cilantro on each bowl for added freshness and flavor.
