1 lb boneless, skinless chicken thighs

1 cup corn starch

1 cup buttermilk

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

Salt and pepper to taste

Vegetable oil for frying

2 cups cooked jasmine rice

1 cup shredded green cabbage

1 cup shredded carrots

1 avocado, sliced

1/4 cup sliced green onions

Sesame seeds for garnish

For the Bang Bang Sauce:

1/2 cup mayonnaise

1/4 cup sweet chili sauce

2 tablespoons sriracha (adjust to taste)

1 tablespoon lime juice

Salt to taste

Marinate the Chicken: In a large bowl, combine the chicken thighs with buttermilk, garlic powder, onion powder, paprika, salt, and pepper. Let marinate for at least 30 minutes (up to 2 hours for more flavor) in the refrigerator.

    Prepare the Bang Bang Sauce: In a small bowl, whisk together mayonnaise, sweet chili sauce, sriracha, lime juice, and a pinch of salt until smooth. Adjust spice levels according to your preference and set aside.

      Bread the Chicken: Remove the marinated chicken from the fridge. Dredge each piece into corn starch, ensuring each piece is thoroughly coated. Shake off any excess starch.

        Fry the Chicken: In a large skillet, heat vegetable oil over medium-high heat. Fry the chicken in batches for about 4-5 minutes on each side, or until golden brown and cooked through. Remove and drain on paper towels.
