2 boneless, skinless chicken breasts

1 cup cornstarch

2 large eggs

1 cup panko bread crumbs

1 cup mixed greens (spinach, arugula, and lettuce)

1/2 cup shredded carrots

1/2 cucumber, thinly sliced

1 avocado, sliced

1/4 cup green onions, chopped

1/4 cup cilantro, chopped

Salt and pepper to taste

Oil for frying

Bang Bang Sauce:

1/2 cup mayonnaise

3 tablespoons sweet chili sauce

1 tablespoon sriracha (adjust to taste)

1 tablespoon rice vinegar

Sesame seeds (for garnish)

Prepare the Chicken: Start by seasoning the chicken breasts with salt and pepper. Cut them into bite-sized pieces.

    Breading Station: Set up a breading station with three shallow dishes. In the first dish, place cornstarch. In the second dish, whisk the eggs. In the third dish, place panko bread crumbs.
