1 pound boneless, skinless chicken breast

1 cup cornstarch

2 large eggs, beaten

1 cup panko breadcrumbs

4 cups cooked jasmine rice

1 cucumber, thinly sliced

1 cup shredded carrots

1 cup edamame, shelled and cooked

1 avocado, sliced

3 green onions, chopped

Sesame seeds for garnish

Fresh cilantro for garnish

For the Bang Bang Sauce:

1/2 cup mayonnaise

1/4 cup sweet chili sauce

1 tablespoon sriracha (more or less to taste)

1 teaspoon lime juice

Salt and pepper to taste

Instructions
 

Prepare the Chicken: Cut the chicken breast into bite-sized pieces. Season with salt and pepper.

    Breading Process: Set up a breading station with three bowls - one with cornstarch, one with beaten eggs, and one with panko breadcrumbs. Dredge each chicken piece first in cornstarch, then dip into the egg, and finally coat with panko breadcrumbs.

      Fry the Chicken: In a large skillet, heat about 1 inch of oil over medium-high heat. Once hot, carefully place the breaded chicken pieces into the skillet in batches. Fry until golden brown and cooked through, about 4-6 minutes per side. Remove and drain on paper towels.

        Make the Bang Bang Sauce: In a small bowl, combine mayonnaise, sweet chili sauce, sriracha, lime juice, and salt and pepper. Whisk until smooth and adjust spice level to your preference.
