Ingredients

1 cup ripe bananas (about 2-3 medium bananas), mashed

1/2 cup unsweetened applesauce

1/2 cup brown sugar

1/4 cup granulated sugar

1/4 cup melted coconut oil or unsalted butter

2 large eggs

1 teaspoon vanilla extract

1 cup all-purpose flour

1/2 cup unsweetened cocoa powder

1 teaspoon baking soda

1/2 teaspoon baking powder

1/4 teaspoon salt

1/2 cup chocolate chips (optional)

1/4 cup chopped walnuts or pecans (optional)

Instructions

Preheat your oven to 350°F (175°C) and grease a 9x9-inch baking pan or line it with parchment paper.

In a large mixing bowl, combine the mashed bananas, applesauce, brown sugar, granulated sugar, melted coconut oil (or butter), eggs, and vanilla. Mix until well blended.

In another bowl, whisk together the flour, cocoa powder, baking soda, baking powder, and salt until evenly combined.

Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Be careful not to overmix; a few lumps are okay.

If using, fold in the chocolate chips and chopped nuts, distributing them evenly throughout the batter.

Pour the batter into the prepared baking pan, spreading it out to ensure even cooking.

Bake in the preheated oven for about 25-30 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs (not wet batter).

Once baked, remove from the oven and let the brownies cool in the pan for about 10-15 minutes. Then, transfer them to a wire rack to cool completely before cutting into squares.

Serve warm or at room temperature, and enjoy the deliciously fudgy flavors of banana bread brownies!
