Ingredients
  

1 block (about 8 oz) of feta cheese

2 cups cherry tomatoes, halved

3 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon red pepper flakes (adjust to taste)

Salt and pepper, to taste

8 oz pasta (fusilli or penne recommended)

Fresh basil leaves, for garnish

Grated Parmesan cheese, for serving (optional)

Instructions
 

Preheat the Oven:

    Begin by preheating your oven to 400°F (200°C).

      Prepare the Baking Dish:

        In a medium-sized baking dish, add the cherry tomatoes and spread them out evenly. Drizzle with 2 tablespoons of olive oil, and sprinkle with salt, pepper, and red pepper flakes. Toss the tomatoes gently to ensure they are well coated.

          Add the Feta:

            Place the block of feta cheese in the center of the dish, surrounded by the tomatoes. Drizzle the remaining tablespoon of olive oil over the feta, and season with additional salt and pepper if desired.

              Bake:

                Put the dish in the preheated oven and bake for 30-35 minutes, or until the tomatoes are blistered and the feta is soft and golden.

                  Cook the Pasta:

                    While the feta and tomatoes are baking, bring a large pot of salted water to a boil. Cook the pasta according to the package instructions until al dente. Reserve about ½ cup of the pasta cooking water, then drain the pasta.

                      Combine:

                        Once the baking is done, remove the dish from the oven. Using a fork, mash the feta cheese and tomatoes together until you have a creamy mixture. Add the cooked pasta directly to the baking dish, and toss to combine. If the pasta seems dry, add a bit of the reserved pasta water until you reach your desired consistency.

                          Finish:

                            Taste and adjust the seasoning if necessary. Garnish with fresh basil leaves and sprinkle with grated Parmesan cheese if desired.
