Ingredients

For the Dumplings:

1 cup all-purpose flour

1/2 cup water (plus more if needed)

1/4 tsp salt

1/2 pound ground pork (or chicken)

1/4 cup finely chopped green onions

1 tbsp soy sauce

1 tsp sesame oil

1 tsp ginger, grated

1 clove garlic, minced

1/2 tsp red pepper flakes (adjust for spice level)

For the Soup:

6 cups chicken broth

2 cups mixed vegetables (such as bok choy, mushrooms, and carrots)

1 tbsp soy sauce

1 tbsp chili paste (adjust for spice level)

Salt and pepper to taste

Fresh cilantro (for garnish)

Sliced green onions (for garnish)

Instructions

Make the Dumpling Dough: In a large mixing bowl, combine flour and salt. Gradually add water while mixing until a dough forms. Knead for about 5 minutes until smooth. Cover with a damp cloth and let it rest for 30 minutes.

Prepare the Filling: In another bowl, combine ground meat, green onions, soy sauce, sesame oil, ginger, garlic, and red pepper flakes. Mix well until all ingredients are thoroughly combined.

Form the Dumplings: Roll out the rested dough on a floured surface until it is about 1/8 inch thick. Cut out small circles (about 3 inches in diameter). Place a teaspoon of filling in the center of each circle. Fold the dough over the filling and pinch the edges to seal tightly. Make sure there are no air pockets.

Prepare the Soup: In a large pot, bring the chicken broth to a boil. Add mixed vegetables, soy sauce, and chili paste. Let it simmer for about 5-7 minutes until vegetables are tender.

Cook the Dumplings: Gently add the dumplings to the simmering soup. Cook for about 8-10 minutes or until the dumplings float and are cooked through.

Season and Serve: Taste the soup and adjust seasoning with salt and pepper, if necessary. Ladle the soup and dumplings into bowls, garnishing with fresh cilantro and sliced green onions.

Enjoy your Authentic Spicy Dumpling Soup!
