Ingredients

1 lb ground beef (preferably 80/20 for flavor)

1 tablespoon vegetable oil

3 cloves garlic, minced

1 tablespoon fresh ginger, minced

2 green onions, finely chopped (white and green parts separated)

1/4 cup soy sauce (low sodium recommended)

2 tablespoons hoisin sauce

1 tablespoon rice vinegar

1 teaspoon sesame oil

1 cup water chestnuts, diced (about 1 small can)

1/4 cup chopped fresh cilantro

1 head of butter or iceberg lettuce, leaves separated

Optional toppings: shredded carrots, sliced cucumbers, chopped peanuts, additional cilantro

Instructions

Heat the Oil: In a large skillet or wok, heat the vegetable oil over medium-high heat.

Cook the Beef: Add the ground beef to the skillet. Break it up with a spatula and cook until browned, about 5-7 minutes.

Add Aromatics: Once the beef is browned, add the minced garlic, ginger, and the white parts of the green onion. Cook for another 1-2 minutes until fragrant.

Combine Sauces: Reduce the heat to medium. Stir in the soy sauce, hoisin sauce, rice vinegar, and sesame oil. Mix well to combine and let it simmer for about 3 minutes, allowing the flavors to meld.

Incorporate Veggies: Add the diced water chestnuts and chopped cilantro. Stir everything together and cook for an additional 2 minutes to warm through.

Prepare Lettuce Wraps: Spoon a generous amount of the beef mixture onto a lettuce leaf. Top with optional shredded carrots, sliced cucumbers, chopped peanuts, and additional cilantro if desired.

Serve: Roll up the lettuce leaf like a taco and enjoy fresh!
