Asado Chicken and Sauteed Lemon Zucchini

For the Asado Chicken:

4 chicken thighs (bone-in, skin-on)

3 cloves garlic, minced

2 tablespoons soy sauce

2 tablespoons apple cider vinegar

1 tablespoon honey

1 tablespoon smoked paprika

1 teaspoon ground cumin

1 teaspoon dried oregano

Salt and pepper to taste

2 tablespoons olive oil

Fresh cilantro or parsley for garnish (optional)

For the Sauteed Lemon Zucchini:

2 medium zucchini, sliced into half-moons

2 tablespoons olive oil

1 clove garlic, minced

Zest of 1 lemon

Juice of 1 lemon

Salt and pepper to taste

Fresh thyme or basil for garnish (optional)

Instructions
 

Marinate the Chicken: In a large bowl, combine minced garlic, soy sauce, apple cider vinegar, honey, smoked paprika, cumin, oregano, salt, and pepper. Add the chicken thighs, ensuring they are well coated. Cover and marinate in the refrigerator for at least 30 minutes or up to overnight for best flavor.

    Cook the Chicken: Heat olive oil in a large skillet over medium-high heat. Once hot, add the marinated chicken thighs skin-side down. Sear for about 5-7 minutes or until the skin is golden brown and crispy. Flip the chicken and cook for another 5-7 minutes.

      Finish Cooking: Lower the heat to medium, cover the skillet, and let the chicken cook for an additional 15-20 minutes, or until fully cooked and internal temperature reaches 165°F (75°C). Remove from the skillet and let rest for a few minutes before serving. Garnish with fresh cilantro or parsley if desired.

        Prepare the Zucchini: While the chicken is cooking, heat olive oil in a separate skillet over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant.

          Saute the Zucchini: Add the sliced zucchini to the skillet with the garlic. Sauté for about 4-5 minutes or until tender-crisp. Add lemon zest, lemon juice, salt, and pepper to taste, mixing to combine. Cook for another minute and remove from heat. Garnish with fresh thyme or basil if desired.
