2 large apples (such as Granny Smith or Honeycrisp), peeled and diced

1 cup all-purpose flour

1/2 cup granulated sugar

1/2 tsp baking powder

1/2 tsp baking soda

1/2 tsp ground cinnamon

1/4 tsp salt

1/2 cup milk

1 large egg

1 tsp vanilla extract

Vegetable oil (for frying)

1/4 cup powdered sugar (for dusting)

Instructions
 

Prepare the Apples: In a medium bowl, toss the diced apples with 1 tablespoon of granulated sugar and set aside to macerate for about 10 minutes.

    Make the Batter: In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, baking soda, cinnamon, and salt until well combined.

      Combine Wet Ingredients: In another bowl, whisk together the milk, egg, and vanilla extract until blended.

        Combine Mixtures: Pour the wet ingredients into the dry ingredients and mix until just combined. Be careful not to overmix; a few lumps are perfectly fine. Gently fold in the macerated apples.

          Heat the Oil: In a deep skillet or pot, heat about 2 inches of vegetable oil over medium heat until it reaches 350°F (175°C). Test the oil with a small drop of batter; if it sizzles and rises to the surface, it's ready.

            Fry the Bites: Use a small cookie scoop or spoon to drop bite-sized amounts of batter into the hot oil. Fry in batches, being careful not to overcrowd the pan. Cook for about 2-3 minutes per side or until they are golden brown and puffed up.

              Drain and Dust: Remove the fritter bites with a slotted spoon and place them on a paper towel-lined plate to drain any excess oil. While they are still warm, dust generously with powdered sugar.
