1 lb chicken breast, cubed

1/4 cup olive oil

Juice of 2 lemons

Zest of 1 lemon

2 tbsp fresh parsley, chopped

2 tbsp fresh cilantro, chopped

2 garlic cloves, minced

1 tsp salt

1/2 tsp black pepper

1/2 tsp paprika

Wooden or metal skewers

1 cup quinoa

2 cups chicken or vegetable broth

1 cup cherry tomatoes, halved

1 cucumber, diced

1/2 red onion, finely chopped

1/2 cup Kalamata olives, pitted and sliced

1/2 cup feta cheese, crumbled

1/4 cup olive oil

2 tbsp red wine vinegar

1 tsp dried oregano

Salt and pepper to taste

Fresh parsley for garnish

1 lb shrimp, peeled and deveined

1 tbsp olive oil

1 tsp chili powder

1/2 tsp cumin

1/2 tsp paprika

Salt and pepper, to taste

8 corn tortillas

1 cup mango, diced

1/2 red onion, chopped

1/2 red bell pepper, diced

Juice of 1 lime

Fresh cilantro for garnish

Instructions
 

In a bowl, combine olive oil, lemon juice, lemon zest, parsley, cilantro, garlic, salt, pepper, and paprika to create the marinade.

    Add the cubed chicken to the marinade, tossing well to ensure each piece is coated. Cover and refrigerate for at least 30 minutes (or up to 2 hours for more flavor).

      If using wooden skewers, soak them in water for about 15 minutes to prevent burning. Preheat your grill to medium-high heat.

        Thread the marinated chicken onto the skewers, leaving a little space between each piece for even cooking.

          Grill the skewers for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
