250g udon noodles

3 tablespoons chili oil

2 cloves garlic, minced

1 teaspoon ginger, minced

2 tablespoons soy sauce

1 tablespoon rice vinegar

1 teaspoon sesame oil

1 green onion, finely sliced

1 tablespoon toasted sesame seeds

Fresh cilantro or basil leaves for garnish (optional)

Salt, to taste

Boil Udon Noodles: In a large pot, bring salted water to a boil. Add the udon noodles and cook according to package instructions (usually about 3-4 minutes for fresh noodles). Drain and rinse under cold water to stop cooking.

    Prepare Sauce: In a large mixing bowl, combine the chili oil, minced garlic, ginger, soy sauce, rice vinegar, sesame oil, and a pinch of salt. Whisk well to combine all the ingredients.

      Toss Noodles: Add the drained udon noodles to the bowl with the sauce. Using chopsticks or tongs, toss the noodles until they are thoroughly coated with the chili oil mixture.

        Serve: Plate the noodles and top with sliced green onions and toasted sesame seeds. If desired, garnish with fresh cilantro or basil leaves for an aromatic touch.
