200g udon noodles

3 tablespoons chili oil (adjust to heat preference)

2 tablespoons soy sauce

1 tablespoon sesame oil

1 tablespoon rice vinegar

2 garlic cloves, minced

1 teaspoon ginger, grated

2 spring onions, chopped (plus extra for garnish)

1 small carrot, julienned

100g bean sprouts

1 tablespoon sesame seeds (for garnish)

Fresh cilantro, for garnish (optional)

Salt, to taste

Instructions
 

Cook the Udon Noodles: Bring a pot of salted water to a boil. Add the udon noodles and cook according to package instructions (roughly 3-4 minutes). Once cooked, drain and rinse under cold water to stop the cooking process. Set aside.

    Prepare the Sauce: In a small bowl, combine the chili oil, soy sauce, sesame oil, rice vinegar, minced garlic, and grated ginger. Stir well to combine.

      Combine Ingredients: In a large mixing bowl, combine the cooked udon noodles, julienned carrot, chopped spring onions, and bean sprouts.

        Dress the Noodles: Pour the prepared sauce over the noodle mixture and toss everything together until well combined. Taste and adjust seasoning with salt if necessary.

          Serve: Divide the chili oil udon noodles into bowls. Garnish with sesame seeds, extra chopped spring onions, and fresh cilantro if desired.
